Chocolate Chip Energy Bites
Who doesn’t crave a little sweet treat and a pick-me-up? But people, come on, the amount of sugar we are consuming is scary. Not only is sugar addicting, it is a root cause of disease including diabetes and heart disease. For obvious reasons I rarely have sugar. There are a million delectable options that will wow you and these coconut oat bites will do the trick!
Ok, these little guys are very addicting but guess what……they are guilt-free, gluten free & processed sugar-free!! They are great for a mid afternoon snack and energy boost but try not to eat the entire batch. It’s quite tempting!
Coconut Oat Chocolate Chip Energy Balls
These delicious little treats are easy to make, gluten free & packed with benefits!
- 1 cup gluten free whole oats (*I use Bob’s Red Mills)
- 1/2 cup unsweetened almond butter
- 1/4 cup Organic ground flax seeds
- 1/4 cup Lily’s sugar free chocolate chips
- 1/4 cup unsweetened shredded coconut
- 1 tsp pure vanilla extract
- 1/4 tsp Ceylon Cinnamon
- 2 tbs pure maple syrup
- 2 tbs honey

In a medium bowl add all ingredients

Mix ingredients until thoroughly incorporated

Use 1 heaping tsp to form ball compressing between hands then rolling into a ball

Store in fridge in eco friendly container for 7 days *they won’t last that long!
