Chocolate Sweet Potato Brownies + Gluten Free


Holy cow these are the best things EVER!! Who says plant-based can’t be delish!!! We’ve been so conditioned to believing that eating healthy doesn’t include yumminess but that couldn’t be further from the truth ya’ll. So here’s the thing, you have to experiment or get on pinterest or youtube because there are soooo many amazing recipes out there. No excuses as to why you can’t eat healthier!

Ingredients + Directions

  • 3/4 sweet potato
  • 1 ripened banana
  • 1 tsp vanilla extract
  • 2/3 cup maple syrup
  • 1 1/2 cups plant milk
  • 1 1/2 cups gluten free flour
  • 1/2 cup cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 tsp ceylon cinnamon
  • 1/2 cup vegan chocolate chips for mix
  • 2 tbs vegan chocolate chips for topping
  • preheat oven to 350 degrees
  • line 9 x 9 baking dish with chlorine free parchment paper
  • in a bowl mash both sweet potato and banana
  • add vanilla, maple syrup and plant milk and mix
  • in a separate bowl add gluten free flour, cocoa powder, baking powder, cinnamon & sea salt
  • add dry ingredients to sweet potato mix and mix thoroughly
  • add chocolate chips and mix
  • pour mix into greased baking dish
  • top with more chocolate chips
  • bake for 45-50 minutes depending on your oven
  • allow to cool for 30 minutes before serving
  • Enjoy!
