Watermelon + Cucumber Salad With Vegan Feta

Oh how I love the vibrant colors of summer fruits not to mention fresh herbs from the garden.  The combination of watermelon, cucumber with basil and lime will for sure elevate your palette.  Not only that, but plant-based foods will raise your vibration with their healing energy.  Ever notice how invigorating it feels to choose fresh fruits and veggies? That is without a doubt your Soul rejoicing so follow your intuition when it comes to healthier choices for mind, body and soul. 

It’s amazing how inspired you feel when you make the decision to look at food as medicine.  Living our best life means treating your body like that temple that we always talk about.  

Ingredients & Instructions

  • 3 cups watermelon diced or chunked
  • 1 cup cucumber diced or chunked
  • 2 tbsp feta vegan – I use Violife
  • 3 tbsp fresh basil chopped
  • 1 tbs fresh mint chopped
  • 1 1/2 tbs raw honey
  • 1/2 lime juiced
  • chop watermelon and cucumber and add to bowl
  • chop fresh basil and add
  • add honey and lime juice
  • mix, plate, garnish with feta
  • enjoy!
