Baby Tomato + Basil Pomodoro

My sweet hubby and I recently went into the tranquil countryside of Tennessee. We stayed at a place called Getaway House in a little tiny cabin overlooking the trees. It was a minimalist experiment to say the least but more importantly we were able to breathe, relax and appreciate the environment. Included in that was a very tiny kitchen with limited options however, there was still the opportunity for creativity. This was one of the recipes I threw together that was not only simple and quick, but quite tasty I might add!!

INGREDIENTS:

  • 2 cloves garlic chopped
  • 1 sweet onion chopped
  • 2 cups cherry tomatoes cut in half
  • 2 tbs olive oil
  • 1/4 cup fresh basil
  • sea salt and pepper to taste
  • jovial gluten free pasta
  • pecorino Romano grated

RECIPE:

  • put pot of water up to boil for pasta
  • in a saute pan on medium high heat add chopped onions and saute for 3-5 minutes 
  • add cherry tomatoes and garlic and lower to medium heat and allow to cook for 5 minutes
  • add fresh basil and cold for an additional 3 minutes
  • strain pasta at al dente the plate and top with fresh pomodoro
  • top with pecorino romano and enjoy!
