Vegan Italian Pasta Salad + Meal Prep Jars

Italian cuisine is known for its rich flavors and textures, and one of the most popular dishes that comes to mind is pasta. Pasta has been a life-long staple for this Italian girl but over the years I’ve come to create healthier options without all the meat and cheese. One pasta dish that stands out from the rest is pasta salad. This refreshing and delicious dish is perfect for any occasion, whether you’re having a picnic, hosting a party, or simply looking for a quick and easy meal. The great thing about Italian pasta salad is that you can use whatever ingredients you have on hand, making it a versatile dish that can be tailored to your tastes.

FOR THE SALAD:

  • 16 oz cherry tomatoes
  • 16 oz artichoke hearts
  • 16 oz cannelloni beans
  • 16 oz black/kalamata olives
  • Jovial Foods gluten free bowtie pasta
  • 6 leaves basil

FOR THE DRESSING:

  • 1/4 cup red wine vinegar
  • Juice of 1 lemon
  • 5 tbs Dijon mustard
  • 3 tbs maple syrup
  • 1/4 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/2 tsp dried oregano 

FOR THE ASSEMBLY:

  • dividing between two 32oz glass jars
  • add dressing, then tomatoes, beans, olives, artichoke hearts, pasta and basil
  • place lid and store in frig until ready to serve
  • pour into a bowl, mix and enjoy!
