Crispy Tofu Tacos With Black Bean & Pineapple Salsa

I have to be honest and tell you that for the longest time the thought of tofu disgusted me lol I’m not kidding! But over the last year I’ve become quite fond of the stuff and going plant-based forced me to experiment more. Now I love it! You can’t go wrong with these tacos because honestly, you can smother just about anything in taco seasoning and it would be great!

Tofu Tacos With Black Bean Pineapple Salsa

For The Tacos:

  • corn tortillas 
  • extra firm tofu
  • Taco seasoning
  • Air fryer/oven

For The Salsa:

  • black beans 
  • Pineapple 
  • Cilantro
  • Lime
  • Sea salt
  • Cumin

The How-To:

  • cut the tofu into 1/4 in strips and place on baking sheet with parchment paper then sprinkle taco seasoning on all sides then place in oven on air fry at 375 for 15-20 minutes or bake for 20 minutes at 400
  • remove and set aside
  • in a bowl add blacks beans, chopped pineapple, cilantro, sea salt, lime and cumin. Mix well
  • add corn tortillas to a plate (can heat for 10 seconds to make more playable) then add tofu strips then salsa and enjoy!
