Spring Detox Salad With Lemon Cilantro Vinaigrette

The beauty of the plant world is diversity not to mention the vibrant colors and powerful nutrients. Salads are the perfect way to throw in a ton of veggies and fuel your body for success. I call this a detox salad because, even though our bodies are designed to detox, our organs become sluggish over time and need a little boost! I’m obsessed with this combo and the vinaigrette. If you look, I didn’t put amounts for the salad ingredients so the sky is the limit on how much you want to make. 

Spring Detox Salad

Salad Stuff:

  • Shredded Brussels
  • Chopped romaine
  • Shredded red cabbage
  • Shredded carrots 
  • Roma tomatoes
  • English cucumbers 
  • Radishes 
  • Italian Parsley 

Lemon Cilantro Vinaigrette: 

  • 3/4 cup EVOO
  • juice of 2 lemons
  • 1/2 teaspoon lemon zest
  • 1/4 cup chopped cilantro
  • 1 tbs maple syrup
  • 2 tbs Dijon mustard
  • 1/4 tsp sea salt

The How-To:

  • assemble all salad ingredients the way you like it
  • add all vinaigrette ingredients to a blender or food processor and blend until incorporated
  • drizzle over salad, mix and enjoy!
